Last week I made
wonjo juice, a Gambian delight made from the flower of the sorrel tree.
I bought dried sorrel flowers in the market - about $1 for a whole bag! They look and smell a bit like pot pourri.
First, I soaked them in water overnight to let all the flavours come out. The next day I strained out the flowers and boiled the deep red juice that was left behind. As it boiled I added sugar to take away the bitterness.
After it cools, the result is a refreshing and flavourful sweet juice. One of my favourite Gambian treats!
Wow - that is a lot of work for a glass of juice! You are a lot more patient than me :)
